Christmas IN July!

Amazingly Good Eggnog

Ingredients

  • 4 cups milk
  • 5 whole cloves
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 12 egg yolks
  • 1 1/2 cups sugar
  • 2 1/2 cups light rum
  • 4 cups light cream
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground nutmeg

Directions

  1. Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil.
  2. In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves, and let cool for about an hour.
  3. Stir in rum, cream, 2 teaspoon vanilla, and nutmeg. Refrigerate overnight before serving.

Beef Wellington!

Brussel Sprouts, cut in half, toss with olive oil, spread on cookie sheet, bake at 400 degrees for 5 minutes. toss with bacon bits and balsamic vinegar.

Easy Brazilian Cheese Bread Recipe Queso Fresco
1 Egg room temp
1/3 cup olive oil
2/3 cup milk
Scant 1 1/2 cups tapioca flour
1/2 cup grated queso fresco
1 tsp salt

1 or 2 mini muffin tins

preheat oven 400 degrees, grease muffin tin
put all ingredients into a blender and pulse until smooth.

Bake in the oven for 15-20 minutes, until all puffy and just lightly browned, let cool.
Toasties and Kabob recipes will come from Sarah. I forgot about the twice baked sweet potatoes. I'll get that.


Bite-sized Baked Brie
makes 24 squares

2 sheets puff pastry, thawed but still cold
1/2 wedge of brie, cold
1/3 cup cherry jam (or any flavor you fancy!)
1 large egg, beaten
splash of milk
All-butter, store bought puff pastry  usually comes frozen and folded into thirds.  We’re going to use these folded thirds to our advantage.  Cut the puff pastry into thirds along the creases.  Cut each panel into four pieces.  They’ll be 2 1/4-inch tall and 3-inches wide.  One sheet of puff pastry will yield 12 rectangles.  Cut each rectangle in half.  You’ll have 24 little rectangles that will create 12 little rectangle pockets.
Combine beaten egg and splash of milk.  Brush 12 of the small rectangles with egg wash.  If you’d like to make brie bites on sticks, now is the time!  Place a popsicle stick halfway up the puff pastry and press in gently.  Place a small sliver of brie (rind and all) on top of the egg wash (and stick).  Top with about 1/2 teaspoon of cherry jam.  Take another square of puff pastry and press between your fingers to make the rectangle slightly bigger.  Place puff pastry on top of the cheese and jam.  Use a fork to press the edges together.  The egg wash will act as a glue.  Make sure to seal the edges well by crimping with the fork.
Place a rack in the center of the oven and preheat oven to 375 degrees F.  Place prepared brie bites on a parchment lined baking sheet.  Brush with egg wash.  Sprinkle with a touch of coarsely ground sea salt.  Bake for 12 to 14 minutes or until golden brown.
Remove from the oven and allow to cool slightly before serving.
Brie bites are best served warm, but are also delicious at room temperature. 

The Best Pavolova
Ingredients
  • 3 egg whites
  • 1 pinch salt
  • 1 cup white sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 1/4 cups heavy whipping cream
  • 1/2 cup confectioners' sugar
  • 1 pint fresh strawberries

Directions

  1. Preheat oven to 300 degrees F (150 degrees C). Line a sheet pan with parchment paper. Draw a 9 inch circle on the parchment. An easy way to do this is to draw around the outside of a 9 inch pan with a pencil.
  2. In a large bowl, beat egg whites on high speed until soft peaks form. Add 3/4 cup of the sugar gradually, while continuing to whip. Make sure sugar is completely dissolved. Mix together the remaining 1/4 cup sugar with the cornstarch; lightly fold into meringue with lemon juice.
  3. Spread a layer of meringue to fit circle on parchment, approximately 1/4 inch thick. With remainder of mixture, pipe or spoon swirls around the edges to form a shallow bowl shape.
  4. Bake at 300 degrees F (150 degrees C) for 1 hour. Turn off oven, but leave meringue in oven for an additional 30 minutes. When cool, the meringue should be hard on the outside, and slightly moist on the inside.
  5. In a large bowl, combine the cream and half a cup of confectioners sugar, and whip until thickened. Decorate with fruit of your choice; strawberries are excellent.

Divine Caramel Sauce Recipe

INGREDIENTS:
1 cup light corn syrup
1 1/4 cups packed brown sugar
1/4 cup butter or margarine
1 cup whipping (heavy) cream
DIRECTIONS:
1. In 2-quart saucepan, heat corn syrup, brown sugar and butter to boiling over low heat, stirring constantly. Boil 5 minutes, stirring occasionally.

2. Stir in whipping cream; heat to boiling. Cool about 30 minutes. Serve warm. Store covered in refrigerator up to 2 months. Reheat slightly before serving if desired.
